Our focus is on distinctive taste and aroma using local ingredients as much as possible. Our commitment is to make beer that is consistently high quality and appealing to the senses.
Each beer we produce will go through the same process beginning with the release of what we call a Foundation edition.
Foundation beers are crafted in small batches, from recipes created or adapted by our Brewer, using only top quality ingredients. Like the stones of an old building foundation, our small batches are the building blocks of our brewery. With so many types and styles of beer to choose from, we want to offer the widest possible choice to our customers. The most popular of these Foundation beers will be moved onto our larger 10 barrel system. Additional Foundation batches will be issued periodically for customers who prefer more adventurous choices, seasonal specialities and more distinctive ales and lagers.
Our big system (10 barrel) production follows the Foundation stage where certain beers are selected for larger production. Each beer will be accompanied by a ‘narrative’ which not only describes the beer by type, ABV, style, aroma, flavour and finish but also adds the story behind it’s naming and development. For example, our Nun on the Run cream ale pays tribute to Katharina Von Bora, who fled the monastery to marry Martin Luther, leader of the Reformation Movement, and subsidize their household income with a profitable beer brewing business! “Dynamite Trail Ale” tells the story of Jack Tanner and his ill-fated love affair with Sarah Boylan, the tragic remnants of which can still be seen on many summer afternoons across Mahone Bay from the highway leading to Lunenburg.
